5 Ingredients that Will Have Diabetics Saying Yes to Veggies

Everybody is always talking about eating more vegetables.

They help you lose weight, combat disease, stay alert, and increase your metabolism.

Really, knowing what we know about diet and lifestyle, there is absolutely no reason not to eat your veggies. The problem? Most people just don’t know how to make their veggies taste good.

Now, there’s a huge difference between making them taste good and smothering them in sauces that definitively make them unhealthy.

Instead of canceling out everything good that veggies have to offer, you need to first learn how to make them totally palatable. How? By smothering them in a sauce or dressing that isn’t bad for you!

Enter my favorite go-to dressing recipe that I use time and time again.

The recipe for this delicious(ly simple) salad dressing is below. But since you probably want a few tips on how to throw together a good salad as well, I’m going to break down the basic veggies I always include in my salads.




First, start with a good green. I particularly like spinach as it is rich in iron and makes me feel fuller, longer. Add a whole, sliced tomato (de-seeded because seeds are gross) to give it some substance. Thinly slice radishes and cucumbers … so thin that you can see through them. This may sound bizarre but trust me, the way that you cut the veggies absolutely transforms the experience.

My favorite thing to do with salads is to add fun, secret ingredients. For example, pumpkin seeds and nori flakes make for a little surprise in each bite. Plus, they are packed with nutrients that you might otherwise miss out on.

Lastly, I pretty much always include a whole avocado in my salads. This shocks a lot of people, but it’s my favorite part about eating salads. Avocado is full of healthy fat that helps protect your heart and makes your skin look dewy. It is also full of fiber so that things can move along nicely through your digestive tract.

Easy Basic Salad Dressing

Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon mustard powder
  • 1-2 teaspoons maple syrup
  • Sea salt and pepper to taste

Directions

  1. Place into a small bowl and whisk until emulsified. Or, you can place in a high-speed blender and blend until smooth.
  2. Drizzle over your favorite salad ingredients.
