Diabetes & Recipes – Spicy Roasted Chickpeas

Ingredients

    • ¼ cup (50 g) dry chickpeas
    • ¼ tsp (2.5 ml) cumin
    • ½ tsp (2.5 ml) chili powder
    • ¼ tsp (1 ml) garlic powder
    • 1 tsp (5 ml) olive oil
    • Salt (optional)



Directions

  1. In a bowl, soak the chickpeas in water overnight.
  2. Set the rack in the middle position. Preheat the oven to 400°F (200°C).
  3. Drain and blot the chickpeas. Transfer them into a bowl. Add the spices and oil. Season with salt. Toss until well combined. Spread the chickpeas onto a baking sheet. Bake for 1 hour or until golden brown.
